The metal structure of material for cookware is aluminum and anodized aluminum. Each of material in cookware have special character, benefit and drawback to each of type. The benefits and disadvantages of this materials. Aluminum is the best conductor of heat in cookware, even if the construction thick enough, heats up evenly

It means , this metal can react with alkaline foods and acidic foods. Alkaline foods such as asparagus and cabbage. Acidic foods such as tomatoes and citrus. It reaction makes the food colour change, metallic taste, and make them appear an unattractive grey shade
So it can be controversial of using the aluminum cookware. Some news give the information that cookware can leach into the food, and can be Alzheimer's disease. The amount of aluminum that absorbed from antacid tablet more much equal to absorbed from cookware. The other news give the relationship between high aluminum levels in the brain and cookware can make a dispute
Its saver to use the anodized aluminum cookware, as other option to use aluminum cookware. The benefits of anodized aluminum cookware on the surface is make cookware harder to provide scratch resistance. And less reactive to alkaline and acidic foods . Even if we use the anodized aluminum cookware, change the food colour still happens. Changes in food taste too. The disadvantages of anodized aluminum cookwareis difficult to keep clean.
